Canadian grillers put on your toques and raise your tongs! It’s time to toast the roast! Winter grilling rates are up 26 per cent over the past three years, which means more of us are braving the cold to grill Canada’s favorite protein, Canadian beef. With online cooking lessons for BBQ Roasting, the Beef Information Centre (BIC) will make your New Year’s celebration a hit – and help save precious oven space for other party essentials like hors d’oeuvres.

“Our house is like most Canadian homes, one oven, one BBQ – using the BBQ to cook our roast not only saves oven space for other dishes, but also adds that distinct barbecue flavour to the meat everyone loves,” says Joyce Parslow, a BIC home economist. “Serving up a BBQ roast beef is easier for me because there is less time juggling with the oven and less clean up too!”

“More and more retailers now carry rotisserie roasts, which allow for easy and even cooking on the grill – with a rotisserie attachment or using indirect heat,” said Parslow. Beef Rotisserie Roasts are boneless, uniform in shape for even cooking, and come tied or netted. They range in size from two to 15 pounds suiting all occasions, a romantic meal for two or a party of 20.

Parslow recommends Premium Rotisserie Roasts, cut from Top Sirloin and Prime Rib, which require nothing more than simple seasonings before cooking. For a more economical choice, Parslow says, “Sirloin Tip and Inside Round rotisserie roasts can be equally delicious and tender if marinated before cooking”. Can’t find a rotisserie roast at the meat counter? Just ask or use indirect heat with a traditional oven roast.

The online cooking lesson for BBQ Roasts features a both a video and step by step instructions with photos which make it easy to follow and enjoy. The BIC’s online cooking lessons and recipes are ready when you are at www.beefinfo.org.
